イワナ・ヤマメ・アマゴは日本の三大渓流魚。イワナが一番上流を好み、続いてヤマメ、さらにアマゴとなる。
鮭やマスの仲間で、水がきれいな渓流に棲んでいるので味が良い。
刺し身も美味しいが川魚のため寄生虫がおり、野生のものは生食するべきではない。基本的には塩焼きで食すのが一般的な食べ方。
Iwana, yamame, and amago are Japan's three major mountain stream fish. The iwana prefers to live upstream the most, followed by yamame and then amago.
It is a member of the salmon and trout family and has a good taste because it lives in mountain streams with clean water.
Sashimi is also tasty, but because they are river fish, they contain parasites and should not be eaten raw in the wild. The most common way to eat them is to grill them with salt.
